Flour Tortillas

Another household staple.  This is the perfect recipe for anal retentives to let go their wicked ways – getting these things perfectly round without a tortilla press, which I don’t own, is nigh impossible.  Get creative instead.  How many African countries can you shape?

Makes roughly 12 tortillas.

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2 tbspn coconut oil
  • 3/4 cup water

In a decent sized bowl whisk the flour, salt and baking powder.  Drizzle and mix the coconut oil until the mixture starts to look like cornmeal (I use a large fork for this part of the mixing).  Drizzle in the water and continue mixing (fork again) until the dough starts to come together in earnest.  Dump it on a floured surface and knead until smooth and elastic.  Roll out a bit and divide into 12 equal medallions.


Heat a large cast iron skillet to medium.  I have a large wooden spatula (you shouldn’t use metal utensils on cast iron) custom made by a woodworker – I use it to mash down my medallion into a decent circle.




Then use I use a well floured rolling pin to finish the job.  If you don’t have Mr. Massive Spatula, you can use your hands to begin the process.  Roll it out nice and thin, then chuck it into your preheated skillet.  Watch it – it’s gonna cook quick!  It’ll bubble up and about 30-40 seconds be ready for a flip.  Remove it in another 30 seconds or so and tuck it into a damp dish/tea towel to cool.  Rinse and repeat 11 more times!
